The Injera has a sour and fermented taste and is enjoyed with Ethiopian stew, especially the Doro Wat Chicken Stew, which is also very common in the country.

  • 2 cups Flour
  • ½ teaspoon Salt
  • 5 cups lukewarm Water (or as preferred)
  • Cooking spray (needed for the skillet)

Instructions

  1. Pour the flour and salt into a large bowl, add water and mix them till they combine well.
  2. Cover with a clean kitchen towel and leave overnight.
  3. Stir with a wooden spoon in the morning. Bubbles and fermented water will rise to the top.
  4. Cover and leave for another overnight and repeat the stirring process and another overnight.
  5. Then after three or five days, the injera will start smelling sour and with bubbles. Stir it till it’s perfectly combined.
  6. Heat the skillet and spray with cooking spray. Add the batter to the edge and cook until bubbles form on the surface. Cover and cook until the flatbread surface is dry. It should take about 5 minutes for each bread to cook.
  7. Use a spatula to remove the injera into a plate, repeat the process and serve hot.
