  • 450 g Large Shrimp, peeled and deveined (1.5 Pound)
  • 1 ½ Tablespoon Vegetable oil
  • 1 finely chopped Onion
  • 3 ½ Minced cloves of Garlic
  • 1 ½ Thinly sliced Red bell pepper
  • 1 ½ Thinly slices Green bell pepper
  • 1 ½ Tablespoon Curry powder
  • 1 ½ Teaspoon Ground cumin
  • 1 Teaspoon of Ground coriander
  • ½ Teaspoon Turmeric powder
  • ½ Teaspoon Paprika
  • 400 ml Coconut milk (1 can/13.5 ounces)
  • 240 ml Vegetable or seafood broth (1 cup)
  • 1 Tablespoon Lime juice
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice or naan bread (for serving)

Instructions

  1. Heat the vegetable oil in a large skillet or pan over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and golden.
  2. Add the sliced bell peppers to the skillet and cook for a few minutes until they begin to soften.
  3. In a small bowl, combine the curry powder, ground cumin, ground coriander, turmeric powder, and paprika. Stir the spice mixture into the skillet, coating the vegetables evenly.
  4. Pour in the coconut milk and vegetable or seafood broth. Bring the mixture to a gentle simmer.
  5. Add the peeled and deveined shrimp to the skillet. Cook for 4-5 minutes, or until the shrimp turn pink and opaque. Be careful not to overcook them.
  6. Stir in the lime juice and season with salt and pepper to taste. Adjust the seasonings according to your preference.
  7. Remove the skillet from the heat. Serve the Coconut Shrimp Curry over cooked rice or with naan bread. Garnish with fresh chopped cilantro for an extra burst of flavour.
