Kelewele
Kelewele is a popular delicious Ghanaian street food and snack made with spiced fried plantain chunks seasoned with ground red bell peppers, crushed onions and a dash of salt to give it that spicy savory flavour. Ingredients
(for 4 servings)
- 1-quart vegetable oil
- 1 small onion, cut into chunks
- 3-4 tablespoons grated fresh ginger
- 2 whole cloves, crushed (optional)
- 5 ripe plantains, diced into 1/3-inch chunks
- 3 tablespoons ground chilli pepper
- salt to taste
Preparation
- Heat oil in a deep-fryer or large saucepan.
- While the oil is heating, purée onion in a blender until smooth. Stir in ginger and cloves.
- Place plantains in a bowl and pour onion mixture over top. Add chilli pepper and salt; mix until plantains are coated.
- Fry plantains in the hot oil until browned on all sides, about 5 minutes. Remove with a slotted spoon and drain on a paper towel.
