Madagascar's Romazava recipe (stew)

Romazava is a delicious and traditional meal from Madagascar, a stunning island. The history of Romazava dates back to a time when several ethnic groups, including the Malagasy, Arabs, and Bantu, all lived in Madagascar. Each tribe contributed to the development of distinctive foods like Romazava, which are a reflection of the island's numerous cultural influences.

Onion (chopped)

Beef or pork (cut into small pieces)

Garlic (minced)

Vegetable oil

Tomatoes (diced)

Beef or pork broth

Parsley (chopped)

Chives (chopped)


Green chillies

Salt and pepper


  • Heat the vegetable oil over medium heat in a large pot.
  • Pour the onions and garlic into it, and sauté for a few minutes.
  • Add the tomatoes and allow to cook for some time.
  • Add the beef or pork, and cook until the meats are browned on all sides.
  • Add the beef or pork broth, reduce the heat and allow to simmer for about 1 hour.
  • Add the chopped spinach to the pot once the meat is well cooked.
  • Add the parsley and chives to the stew, stir and add salt and pepper.
  • Allow simmering for 10 minutes.
  • Serve hot with bread or rice.
