  • 1 Kilogram Tripe
  • 1 teaspoon Garlic Powder
  • 1 Red Chilli
  • 1 teaspoon Paprika
  • 2 Bay leaves (or as preferred)
  • 2 teaspoon Garam Masala (or as preferred)
  • Parsley (chopped)
  • 1 Onion (Chopped)
  • 2 ½ Tomatoes (Chopped)
  • 1 Chicken Stock Cube
  • Cooking Oil
  • Salt and Pepper
  • Yoghurt

Instructions

TRIPE

  1. Put the Tripe in a bowl, then sprinkle the salt over it and add water.
  2. Let it soak for about an hour, rinse it under running water.
  3. Cut it into bite-size pieces, and then place in a saucepan. Add a small amount of salt and then water.
  4. Boil it for about 3 hours under low heat to tender properly.
  5. Pour the oil into a skillet, add the chilli, paprika, bay leaves and masala garlic and stir over the low heat.
  6. Add the tomatoes, continue stirring and let it cook for about 2 minutes.
  7. Add the yoghurt, and stir for the sauce to be thick over low heat.
  8. Add the tripe, and allow it to cook for about 2 minutes.
  9. You can garnish it and serve it hot.
