Sobolo

Oftentimes, I’ve been on the hunt for something insanely refreshing and truly Ghanaian to try out and when the craving sets in, it just needs to be satisfied. Sobolo, also known as roselle juice, bissap, and wonjo, in parts of Africa, is a drink made out of the flowers of the roselle plant, a variety of the hibiscus plant. It is a dark red-purple-coloured juice infused with pineapple and ginger with a tanginess you will definitely appreciate. Sobolo is plant-based goodness and a great choice of drink for any occasion; a refreshing indulgence like summer on the rocks. So tasty and spicy, you’ll be making all kinds of sounds.

  • 2 Cups Hibiscus leaves
  • 1 Medium-sized ripe pineapple
  • ½ Cup Sugar
  • ½ Ginger
  • 1 ½ Piece Prekese (Aidan fruit)

Instructions

  1. In a large saucepan, pour in Hibiscus leaves and add water to cover up leaves.
  2. Under high heat, put Hibiscus leaves on fire.
  3. Wash and peel pineapples and ginger.
  4. Add the pineapple peels to Hibiscus leaves. Allow it to boil for 10-15 mins (until water changes colour)
  5. Using a sieve or colander, drain and separate the drink from the cooked leaves and peels.
  6. Blend pineapple and ginger until smooth. Pour into the sobolo drink and stir.
  7. Allow the drink to cool down completely before you add your sugar.
  8. Store in fridge before use or add ice to sobolo drink.
