Jerk Chicken is a culinary masterpiece that originated in Jamaica. The technique of "jerking" involves marinating the meat, in this case chicken, in a bold and spicy blend of seasonings, which is then grilled or smoked to perfection. This method was traditionally used by the Arawak indigenous people to preserve and flavour their meat. Over time, the distinct flavours and cooking styles of jerk chicken have become synonymous with Caribbean cuisine. Bursting with a harmonious blend of aromatic spices, this dish is a staple in Caribbean cuisine. Let's dive into the details and learn how to recreate this delectable, fiery delight in your own kitchen.

  • Total Time: 35 mins

  • 2 Pounds of Chicken pieces (legs, thighs, or breast)
  • 2 tablespoons of Jamaican jerk seasoning
  • 2 tablespoons of Vegetable oil
  • 2 tablespoons of Soy sauce
  • 2 Tablespoons of Brown sugar
  • 2 Tablespoons of Lime juice
  • 2 Cloves of Garlic, minced
  • 1 teaspoon of Ground allspice
  • 1 Teaspoon of Dried thyme
  • 1 Teaspoon of Paprika
  • 1 teaspoon of Cayenne pepper (or as prefered)
  • Salt and black pepper to taste

  1. In a large bowl, combine the Jamaican jerk seasoning, vegetable oil, soy sauce, brown sugar, lime juice, minced garlic, ground allspice, dried thyme, paprika, cayenne pepper, salt, and black pepper. Mix well to create a marinade.
  2. Place the chicken pieces in the bowl with the marinade. Ensure that each piece is coated thoroughly with the marinade. Cover the bowl and let it marinate in the refrigerator for at least 2 hours or overnight for maximum flavour.

  1. Preheat your grill to medium-high heat. If you don't have a grill, you can also use a grill pan or bake the chicken in the oven.
  2. Once the grill is hot, remove the chicken from the marinade and shake off any excess. Reserve the marinade for basting.
  3. Grill the chicken for about 6-8 minutes per side, or until it reaches an internal temperature of 165°F (75°C). While grilling, occasionally baste the chicken with the reserved marinade for added flavor and moisture.
  4. Once the chicken is cooked through and nicely charred, remove it from the grill and let it rest for a few minutes.
  5. Serve the jerk chicken hot with your favourite Caribbean side dishes such as rice and peas, plantains, or coleslaw.
  6. Enjoy the aromatic and flavourful Caribbean delight of homemade jerk chicken!
