  • 2 Pounds of Chicken pieces (legs, thighs, or breast)
  • 2 tablespoons of Jamaican jerk seasoning
  • 2 tablespoons of Vegetable oil
  • 2 tablespoons of Soy sauce
  • 2 Tablespoons of Brown sugar
  • 2 Tablespoons of Lime juice
  • 2 Cloves of Garlic, minced
  • 1 teaspoon of Ground allspice
  • 1 Teaspoon of Dried thyme
  • 1 Teaspoon of Paprika
  • 1 teaspoon of Cayenne pepper (or as prefered)
  • Salt and black pepper to taste

  1. In a large bowl, combine the Jamaican jerk seasoning, vegetable oil, soy sauce, brown sugar, lime juice, minced garlic, ground allspice, dried thyme, paprika, cayenne pepper, salt, and black pepper. Mix well to create a marinade.
  2. Place the chicken pieces in the bowl with the marinade. Ensure that each piece is coated thoroughly with the marinade. Cover the bowl and let it marinate in the refrigerator for at least 2 hours or overnight for maximum flavour.

Cooking

  1. Preheat your grill to medium-high heat. If you don't have a grill, you can also use a grill pan or bake the chicken in the oven.
  2. Once the grill is hot, remove the chicken from the marinade and shake off any excess. Reserve the marinade for basting.
  3. Grill the chicken for about 6-8 minutes per side, or until it reaches an internal temperature of 165°F (75°C). While grilling, occasionally baste the chicken with the reserved marinade for added flavor and moisture.
  4. Once the chicken is cooked through and nicely charred, remove it from the grill and let it rest for a few minutes.
