Jamaican Beef Stew

Most Jamaican cuisines mostly reflect a combination of ingredients from Africa and America and people from other parts of the world that inherited the Island. The Jamaican Beef Stew throws its inspiration from that lineage, prepared from hearty beef with scotch bonnet, ginger and other (required) spices and served with rice. The addition of burnt (or brown) sugar mainly differentiates the Jamaican Beef Stew from other beef stews around the world.

Marinade

  • 2 Pounds boneless beef stew meat, cut into ¾ cubes
  • 1 Finely chopped large yellow onion
  • Medium chopped scallions
  • Chopped large cloves of garlic
  • 1 teaspoon hot pepper/ground black pepper
  • 1 teaspoon ground allspice
  • 1 teaspoon sugar

  • Sliced onion (as required)
  • ¼ cup vegetable oil (or canola oil)
  • 1 tablespoon reduced-sodium soy sauce
  • 2 cups chicken stock
  • 2 bay leaves
  • ½ Inch slices of Large carrot
  • Sliced scallions (with extra for garnishing)
  • Sliced red bell pepper
  • ¼ Cup sliced onion

Instructions

  1. Combine the beef, onion, scallion, garlic gloves, scotch bonnet pepper, ground black pepper, allspice, ginger and sugar in a large bowl, mixed them together, cover and refrigerate for a few hours or till the next day.
  2. Remove the beef from the marinade, place it in a medium-high heat pot, and add oil. Keep the marinade to use later.
  3. Singe the beef for about 4-5 minutes on each side; this should be done in batches to achieve good brown colour and not to over singe it.
  4. The sugar from the season will help with the brown colour which is what we looking to get, and reduce the heat in between.
  5. Add the marinade to the pot and turn off the eat after all the beef has browned properly, add the stock together with the ketchup, soy sauce and then the bay leaves and allow it to simmer gently under reduced heat for about an hour.
  6. You can now remove the bay leaves and thyme and add the carrot and potatoes once the beef is a bit soft, once allow it to simmer for about 30 minutes and add the remaining vegetables
  7. Remove the lid and reduce the cooking liquid, use a fork to smash the soft potatoes against the side of the pot to thicken the stew further.
  8. You can now taste and adjust the seasoning, garnish further and then serve either alone or with rice.
