Jamaican Ackee and SaltFish

Ackee and Saltfish is a national dish in Jamaica often served at breakfast or brunch with dumplings or served with rice and peas for dinner. The dish is believed to have originated during colonial times from enslaved West Africans who combined their ackee fruit with the local salt fish for breakfast in Jamaica.   • 1 Canned ackee
  • ½ pound Boneless saltfish
  • 1 Diced Onion
  • 1 Seeded and minced Scotch bonnet pepper
  • 2 chopped Scallions
  • 1 Diced tomato
  • ½ Diced bell pepper
  • ½ Teaspoon black pepper
  • Cooking oil

Instructions

  1. Wash the saltfish thoroughly and place it in a bowl of water to soak overnight or for at least 3 hours. This helps to remove excess salt.
  2. Drain the water from the saltfish and transfer it to a pot. Fill the pot with enough water to cover the fish. Place it over medium heat and bring it to a boil. Boil the saltfish for about 10 minutes.
  3. Remove the pot from the heat and allow the saltfish to cool. Once cooled, flake the fish into small chunks and set it aside.
  4. Heat some cooking oil in a frying pan over medium heat.
  5. Add the diced onion, minced scotch bonnet pepper, chopped scallions, diced tomato, and diced bell pepper to the pan. Sauté the ingredients for about 5 minutes, until they become fragrant and slightly softened.
  6. Add the flaked saltfish to the pan and stir well to combine with the other ingredients. Be cautious with adding additional salt, as the saltfish is already salty. Season with black pepper to taste.
  7. Drain the canned ackee and gently add it to the pan, being careful not to break up the ackee too much. Gently fold the ackee into the mixture.
  8. Allow the ackee and saltfish mixture to simmer for about 5 minutes, stirring occasionally. This will allow the flavours to meld together.
  9. Remove the pan from the heat and the ackee and saltfish is ready to be served.Serve the Jamaican Ackee and Saltfish with white rice, boiled or fried dumplings, and a side of plantain.
