Syrup

  • 2 cups Water
  • 3 cups White sugar
  • 1 teaspoon Lemon juice
  • ½ zested Medium lemon
  • 3 Freshly peeled Ginger

  • 1 Cup oil
  • 1 tablespoon Baking soda
  • ¼ Teaspoon salt
  • ½ cup Milk
  • 2 tablespoon Cold butter (unsalted)

Instructions

How To Make The Syrup:

  1. Boil the sugar, lemon, ginger, lemon juice and water in a medium-heated saucepan for about 10 minutes.
  2. You can now remove and allow the syrup to cool at room temperature for 30 minutes.
  3. Pour it into a bowl and refrigerate overnight until the flavour blends well.

How To Make The Koeksisters:

  1. Sieve the baking powder, flour and salt into a bowl and add the butter. Rub with your finger till you achieve a cornmeal texture and wrap it in plastic wrap and leave for about 2 hours.
  2. Roll the dough on a lightly floured surface and roll it into a rectangle, cut and twist them together. Repeat the process and leave for about 15 minutes.
  3. Set a wire rack over a baking sheet on heated oil in a saucepan, pour a portion of the syrup into a bowl and keep the rest in the refrigerator.
  4. Now fry the koeksisters in hot oil for about 5 minutes until you achieve golden brown colour. Remove with a slotted spoon and place into the syrup for about 10 seconds.
  5. Then cool it and repeat the process.
  6. ENJOY!
