Qumbe (East African Coconut Candy)

The Qumbe is a popular sweet coconut candy within East Africa, originated from Somalia and quickly spread into the Eastern Region of Africa. It is served after dinner and enjoyed by many within the region. It’s sometimes difficult to find the recipe needed for it outside of East Africa, hence a few people have made certain adjustments to it but the main candy is enjoyed in the East.

  • ½ cup Coconut milk
  • 2 Cups Unsweetened grated coconut (or as preferred)
  • 1 Cup Almond flour
  • 1 ⅓ cups White sugar (or as preferred)

Instructions

  1. Mixed 2 cups of the grated coconut and coconut milk in a bowl
  2. Semi-heat a saucepan and place sugar in it, stir it to melt for about 5 minutes.
  3. Remove the saucepan from the fire, add the coconut mixture and almond flour, stir until it is well combined and cool it.
  4. Roll the coconut mixture into bite-size balls, and then pour the grated coconut into a bowl.
  5. Roll the bite-size balls in coconut till it’s coated well, refrigerate for about 15 minutes.
