Tanzanian Street Snack: Chips Mayai

The popular Tanzanian street snack known as Chips Mayai, also known as "Mayai Wazimu" or "Crazy Eggs," cleverly mixes the attraction of French fries with the coziness of an omelette. This culinary innovation exemplifies the inventive energy of Tanzanian street vendors and embodies the essence of a quick, tasty, and full snack. The meal holds a particular place in the hearts and palates of both locals and tourists due to its harmonious combination of textures and flavors.

Street food has always played a crucial role in Tanzanian culture, supplying a variety of people with accessible, affordable food. Vendors looked for creative ways to entice hungry customers as urbanization and cultural interchange altered Tanzania's gastronomic environment over time. This setting was the one in which Chips Mayai was created.

Chips Mayai immediately became well-known. The contrast between the fluffy omelette and the crisp fries provided a pleasing flavor that delighted taste sensations. Variations appeared as the meal expanded from street corners to neighbourhood restaurants and homes. While some sellers experimented with adding more ingredients like onions, tomatoes, and peppers, others used regional spices to give the dish a distinctively Tanzanian flavor.

Ingredients

For the Chips (French Fries):

2 large potatoes (cut into thin strips)

Cooking oil

Salt

For the Mayai (Omelette):

4 large eggs

Salt and pepper

Onions (chopped) 

Tomatoes (chopped)

Green bell peppers (chopped)

Green chilies


 

Preparation

  • Rinse the potato strips in cold water to remove excess starch.
  • Carefully add the potato strips in batches in the preheated oil and fry until they are golden brown and crispy.
  • Remove them using a slotted spoon and place them on paper towels to drain excess oil. 
  • Crack the eggs and beat them well and season with salt and pepper in a bowl. 
  • Mix in the onions, tomatoes, green bell peppers, and green chilies into the beaten eggs.
  • Heat a non-stick skillet over medium heat. Pour a thin layer of the beaten egg mixture into the skillet.
  • Quickly place a layer of the prepared French fries on top of the egg mixture in the skillet.
  • Pour the remaining egg mixture over the French fries, ensuring they are well-covered.
  • Cover the skillet with a lid and let the omelette cook for a few minutes until the bottom is set and golden brown.
  • Carefully flip the omelette using a spatula and cook the other side until it's cooked through and nicely browned.
  • Slide the Chips Mayai onto a serving plate and garnish with the cilantro or parsley, Serve!
