  • 2 cups of Bambara nut flour
  • 1 cup of warm water
  • 1 tablespoon of ground crayfish (optional)
  • 1 tablespoon of pepper (optional)
  • 1 tablespoon of salt
  • Banana or plantain leaves for wrapping

Instructions

  1. Begin by soaking the Bambara nut flour in warm water for about an hour. This will soften the flour and make it easier to work with.
  2. After an hour, drain the water from the flour and add the ground crayfish, pepper, and salt. Mix well until the ingredients are evenly distributed.
  3. Cut the banana or plantain leaves into squares, about 6 inches by 6 inches. This will be used to wrap the Okpa. 
  4. Scoop a tablespoon of the Bambara nut mixture onto a leaf and roll it up tightly, twisting the ends to secure it.
  5. Place the wrapped Okpa into a pot of boiling water and cook for about 20-30 minutes. The Okpa is done when it is firm to the touch.
  6. Remove the Okpa from the pot and let it cool for a few minutes before serving.
