Ghanaian Tubaani Recipe
Tubaani, also referred to as steamed beans pudding, is commonly eaten in the Northern regions and Zongo communities of Ghana. Tubaani consists of a paste made from beans and water which is then cooked after wrapping the beans paste in the sweet-tasting, aromatic leaves of the Moi moi leaf plant. It is then served with gravy or suya spice and caramelized onions. It is packed with proteins and serves as a great vegan meal. It’s tasty with a capital T!

Ingredients

- 2 tbsp of salt: https://niyis.co.uk/tropical-sun-seasoning-salt/
- Moi moi leaves: https://niyis.co.uk/moi-moi-leaves/
Preparation
- In a mixing bowl, mix beans powder, salt and salt petre.
- Then add water and mix into a smooth consistency.
- Scoop a spoonful into a Moi moi leaf, wrap and set aside.
- Continue the process with the remaining mixture.
- Bring water to a boil, place a splatter guard on the saucepan, then carefully place the wrapped mixture on the splatter guard and cover to steam.
- Let it cook for 30 minutes and take off heat.
- Tubaani is ready to serve.
