Jamaican Brown Stew Chicken 

Brown stew chicken is a traditional Jamaican dish prepared in most households mainly on Sundays but can also be cooked anytime within the week. It is both very healthy and delicious and so if you’re looking to feed your palate with something exotic you’re bound to love, this is a must-try! 

Let’s get cooking! 

Ingredients 

  • Whole chicken 
  • Chicken seasoning 
  • All-purpose seasoning 
  • Garlic 
  • Thyme 
  • Browning (to give a caramelised flavour but don’t use too much as can be bitter)
  • Paprika 
Jamaican brown chicken stew

 

Preparation 

  • Cut up a whole chicken in pieces and remove the skin. 
  • Wash chicken in lemon. 
  • Cut up onions, bell peppers, scallion and carrots add to the chicken and marinate overnight or for a minimum of 30 mins 
  • Put some oil in a pot under medium heat with two tablespoons of brown sugar. Then with a fork,  take off the scallion, bell peppers and carrots from the meat. 
  • Add the meat to the pan and fry till  brown on both sides for 3-5 mins 
  • Remove chicken from pan and add onions, bell peppers and cook for 3 minutes. 
  • Afterwards, add the chicken back to the pan followed with 1 cup of water and carrots turn the fire low and let it simmer. 
  • Add water to preference, add ketchup to taste and cook for 35 mins. 
Voila, your stew is ready!
