Jamaican Rice and Peas
Rice and peas are a staple food in Jamaica that goes along with most Jamaican stews. We have it with oxtail, brown stew chicken, brown stew fish and much more. Here’s an easy guide to making rice and peas.
Ingredients
- Jamaican red kidney beans
- Basmati rice
- Coconut milk
- Scotch bonnet pepper
- Scallion
- Garlic
- Thyme
- All-purpose spice
Preparation
- Wash the fresh beans and cook in a pressure cooker for 15 mins. If you don’t have a pressure cooker, cook until soft.
- After the beans are soft, add coconut milk and salt to taste. Also add your scallion, scotch bonnet pepper and thyme.
- Add rice if you need to and add water just above the rice and set to boil. Once it starts to boil, turn the heat to low and steam cook.
- When ready, serve hot with a variety of stews like the brown stew chicken.
