Ingredients
- 2 cups of ukwa (African breadfruit)
- Water
- Salt
- Stockfish or smoked fish
- Crayfish
- Onion
- Ground pepper
- Palm oil
Preparation
- Wash the ukwa in clean water and transfer it to a pot.
- Add enough water to cover the ukwa and bring it to a boil. Boil for 15 minutes and drain the water.
- Add fresh water to the ukwa and boil for another 15-20 minutes until it is soft.
- Drain the water from the ukwa and rinse it in cold water.
- In a separate pot, heat up some palm oil over medium heat. Add chopped onions and sauté until they are soft and translucent.
- Add the boiled ukwa to the pot and stir well.
- Add the smoked fish or stockfish, crayfish, and ground pepper to the pot and stir well.
- Add salt to taste and stir well.
- Cover the pot and let the mixture simmer over low heat for 10-15 minutes.
- Serve the ukwa hot as a side dish or as a main course.
