Ingredients

  • 2 cups of ukwa (African breadfruit)
  • Water
  • Salt
  • Stockfish or smoked fish
  • Crayfish
  • Onion
  • Ground pepper
  • Palm oil


Preparation 

  • Wash the ukwa in clean water and transfer it to a pot.
  • Add enough water to cover the ukwa and bring it to a boil. Boil for 15 minutes and drain the water.
  • Add fresh water to the ukwa and boil for another 15-20 minutes until it is soft.
  • Drain the water from the ukwa and rinse it in cold water.
  • In a separate pot, heat up some palm oil over medium heat. Add chopped onions and sauté until they are soft and translucent.
  • Add the boiled ukwa to the pot and stir well.
  • Add the smoked fish or stockfish, crayfish, and ground pepper to the pot and stir well.
  • Add salt to taste and stir well.
  • Cover the pot and let the mixture simmer over low heat for 10-15 minutes.
  • Serve the ukwa hot as a side dish or as a main course.
