Ghanaian Koose Recipe

Koose is a spicy bean fritter that is commonly eaten in Ghana during breakfast. It is a popular Hausa meal which originates from the Northern part of Ghana. It is nutritious and power-packed with proteins, as beans is one of the ingredients in this delicious recipe. This savory dish is usually accompanied with Hausa kooko. Aaaannnd we are drooling! Brekkie is served!

  • 1 1/2 cups dried black-eyed beans
  • 1 medium onion
  • 1 (1-inch) piece ginger
  • 1/2 to 1 scotch bonnet pepper
  • 1/2 cup water
  • 1 teaspoon of salt
  • 4 cups vegetable oil, for frying

Instructions

  1. Prepare the beans by soaking and dehulling two days in advance.
  2. Place the beans into a sturdy blender and begin to pulse until smooth. Add 1/4 cup of water at a time to facilitate the blending process.
  3. Add the onion, ginger, and scotch bonnet pepper to the blender.
  4. Pulse until smooth.
  5. Add salt and mix them into the batter.
  6. Heat up the cooking oil in a small- to medium-sized saucepan.
  7. Test the readiness of the oil by adding a shaved piece of ginger. If it sizzles and rises to the top, the oil is hot enough.
  8. Using a tablespoon to scoop the batter, spoon about 5 tablespoons of batter into the oil. You will see them puff up into round balls.
  9. Allow to fry for 3 to 4 minutes. Turn them halfway through to ensure they are evenly browned.
  10. Once cooked, scoop them out of the oil using a slotted spoon or spider, and allow to drain on a paper towel.
  11. You can also enjoy them the traditional Hausa breakfast way, with porridge known as Hausa kooko.
